Imagine thousands of hard, icy marbles dropping into grape crusher and grape press. Notes of orange liqueur and cherries lead to a acid. Frozen grapes are picked frozen on the vine and come into the winery. The aromatic structure formed by brown sugar and orange peel is highlighted by hydrangea and tangerines. I wouldn’t have dessert with this, but if I were then it would be a simple vanilla Creme Brulee. The secret to ice wine is processing frozen grapes at around 20 F (-7 C). Riesling is one of the great white grape varieties with excellent. Serve this cold, and then let it come up to temperature. The wine is sweet but is finely balanced with fruit flavours and a strong backbone of acidity. Beautiful acidity keeps you from crying due to the elevated sugar.
